Breakfast

I don’t know about you, but many, including myself have a busy lifestyle! Sometimes breakfast is what people struggle with and end up skipping it. Breakfast is essential as it gets us ready and metabolism going for the day. Here are a few easy and healthy recipes that you can try to prep ahead of time to be more efficient in the mornings and no skip breakfast.

Mini Breakfast Quiche

I love grabbing these little things on the go. I make them ahead of time, store in the freezer and a put in the toaster oven while I get ready in the morning. Its a quick power breakfast that is filling,  high in protein and grain free. These are the ingredients I like to use, but I encourage you to add what ever tickles your taste buds!

Grab items from your fridge and chop up, there are no rules.

Ingredients:

1/2 bup chopped brocollc

bunch of spinach

a piece of red, green and or yellow bell pepper

1 small onion

1 large carrot shredded

12 eggs (you can use 6 whole eggs and 6 egg whites if you like)

Seasonings- I don’t know where you get your vegetables, but where I get mine they don’t come seasoned!

Add flavor to your life. I like to sprinkle garlic powder, a little salt, fresh ground pepper, and cayenne pepper.

Directions:

Chop vegetables. In a separate bowl beat eggs with an electric mixer. Add seasonings, then add vegetables and beat well. Grease muffin pan with butter or coconut oil. fill cups with mixture (making sure they are blended well). Bake in the oven at 350 degrees for 20-25 minutes.

Sweet Potato Protein Pancakes (Grain free)

Ingredients:

1 cooked sweet potato
1 scoop TLS Vanilla Nutrition Shake
1/2 cup egg whites
Cinnamon & Vanilla Extract to taste

 

Sweet Potato Pancakes (Option 2)

Ingredients:

3/4 cup oatmeal
2 tablespoons almond milk
1/4 cup sweet potato, mashed (to mash sweet potato quickly, wash the potato, stab it with a fork, wrap in paper towel, and microwave for 6 minutes)
1 egg
2 tablespoons pecans, crushed
Cinnamon
Topping: strawberries, Blueberries, or any other berry of your choice. 

Directions:

Heat and oil griddle.
Mix first six ingredients.
Pour onto griddle and form pancake shape.
On Medium Low, cook slowly until golden brown.
Flip and cook other side slowly until golden brown
Plate, top with fruit and enjoy!
